Cooking with Amber (No Really!)

Hi!

Welcome to Cooking with Amber.

Wait. COME BACK!

Look, I know I can be a crummy cook. Yes, I did set off the fire alarm while making pancakes. But there are some things that I do make well. And one of those things is my bacon wrapped chicken.



So first you get some boneless chicken and pound it. Pretend that it’s an ex-boyfriend/girlfriend’s head. Or pretend that it’s the head of that chick you passed while going grocery shopping who was texting while driving—her knees were controlling the wheel. I’m not kidding. HER KNEES! Basically she was saying, “Lalala, texting to find out who Bippy is bopping is more important than human lives, lalalala.”

Ahem.

I went off in a tangent.

Sorry.

And I just realized that I probably should list the ingredients that you need first.

I’m just as unorganized when I’m cooking.

Anyhow, this is what you need:

Boneless chicken breasts
1 lb bag of mozzarella cheese
Salt
Pepper
Garlic Powder
BACON <-----Yes, needs to be capitalized because bacon rocks

Preheat oven to 375 degrees.



And THEN you can pound your meat.

Okay, that just sounds wrong.



After the meat has been pounded (teehee), you season the chicken. I season both sides with salt, pepper, and garlic power.



Then you get some bacon and place it on the bottom of the chicken. I use two slices of bacon because, well, bacon is delicious.



Add the mozzarella cheese and then roll up the chicken.

So it looks like this.



Yum, huh? And easy!

Cook for 45 minutes and believe me, this dish makes your house smell fantastic. It’ll even get the attention of your husband, who has been staring at the computer for two hours. He’ll be all, “Wow, that smells good!” and then you’ll be thinking, “Whew, it lives! Hooray for the power of bacon!”

  2. First off - yes, BACON ROCKS! Second, I am actually going to write this one down in my recipe notebook. You may have hit the perfect combination because I NEVER turn down bacon OR cheese!

    I once at a whole pound of bacon while pregnant. It didn't end well.

    Everything tastes better with bacon...I think there's a proven fact about it somewhere.

  12. Yes, that chicken is actually the head of the texter. I am still paying the price for the young kid who slammed into me a few months ago because texting was more important than driving. ARGH!

  17. I love bacon wrapped chicken! The recipe I have is different (no cheese, instead you use cream cheese spread), but as long as you have bacon all is right with the world.

    I bet you really pounded the daylights out of the chicken - I would too after seeing a texting moron driving with their knees.

  20. What a second sister. I DISLIKE, HATE, ABHOR cooking of any kind. I let the hubby do that nasty job.

    But, I could do this but I have a couple of question.

    Do you cook this covered? uncovered?

    OH ,I have the exact same meat tenderizer that you do. It's the best tool in the world. Not just for the kitchen either. LOL I use it for anything I might need a hammer for...just use one of the flat sides. I bet you do too.

  26. Mmmm! This should be a regular segment on your blog!

    We do a very similar version of this in our house, super fast and easy, and everyone LOVES IT!

    The only difference with ours is
    1. we put the bacon on the inside, so all that fatty bacony goodness gets stuck in the cheese.
    2. we spread a thin(ish)layer of cream-cheese with chives inside rather than mozzarella

    I'll try your version next time, I'm sure its awesome!

  28. A lot of people said they usually use a cream cheese spread: that was the original recipe I think but cream cheese freaks my husband out. So we use mozzarella now.

  39. Anything that says, "pound the meat" sounds good to me. Oh. It's a recipe. Okay. Well, there's bacon involved. That's great, too. And cheese. Even better. Yummo. If I had any chicken breasts in the freeze, I'd try this recipe tonight.

  42. Bacon and cheese! Does it get any better than that? Okay, I rock a "mock abalone" that is also fantastic. Pound the hell out of the chicken to flatten it and then stick it in some clam juice for 2 or 3 days to marinate. Lightly flour, salt and pepper, hot pan and turn once and serve with lemon slices. Friends don't believe it's chicken!

  48. It was absolutely phenomenal, but I did also throw a bit of bacon bacon seasoning from tastefully simple in with the cheese. OMG! I am so excited to have leftovers for lunch tomorrow! Thanks!

  53. Chicken's in the oven, beans and potatoes on the stove. And it truely smells delicious! I seasoned with salt, pepper and dried pepper flakes - not that I am not trusting your seasoning abilities, but I am like that, always changing recipes. (^v^)
